Also, three weeks of scale readings is noisier than people expect. Water shifts from salt, carbohydrate, training and general life easily hide a slow loss for a fortnight. Weigh daily at the same time and look only at the seven day average, and judge by whether the averages are trending, not by any single morning.
Eight packages, three people, Node runtime. Either of these is going to be fine and this decision will take less of your year than the meeting about it.
One cheap diagnostic: after the brew, look at the bed. Flat and even with a shallow dish is good. A deep crater or coffee stranded high up the paper walls means the water went around it, which lines up with everything else here.

Mild disagreement with the pure review plan. I would split it, four weeks of algebra triage and then two weeks reading the first chapter of whatever textbook the course uses. Carbohydrate is the whole family, sugars are one member of it. In a cracker the other 21g is almost entirely starch, which is a long chain of glucose units that simply is not classed as sugar on a label. Nothing is being hidden from you.
The protein bar is a different situation. Those usually carry sugar alcohols such as maltitol or erythritol and sometimes a lot of fibre, and depending on the labelling rules where you live those may or may not be included in the carbohydrate figure, which is why the lines look like they do not add up.
One more trap worth knowing: no added sugar means none was added, not that there is none present. Fruit purees in a bar can be a substantial amount of sugar with that claim on the front.
Most graders are fine with you writing the scratch work in the margin or labelling it as such, as long as the actual proof stands alone. Ask yours, it costs nothing.
Forty minutes an evening is plenty to cook fresh, so if you enjoy cooking, the barrier is not time, it is deciding. What killed weeknight cooking for me was standing in the kitchen at seven with no plan. Write down five meals on Sunday, buy for exactly those, and the 40 minutes is fine.
