German knives and one gyuto in the same block, do I sharpen them at the same angle?

I spent a year sharpening everything at whatever felt right and wondering why my results varied. What fixed it was not learning the correct angle, it was marking the existing bevel with a permanent marker before I started and looking at where the marker was coming off. If it is only coming off the shoulder, I am too shallow. Only at the very edge, too steep. That one trick told me more about my own hands than any number did.

About to cut the first hole in a 2016 Sprinter, what did you rip out and redo

Two ventilation mistakes are almost universal and they are the ones that cause the damp threads. Fitting a single roof fan with no low intake, so the air has nowhere to come from, and sealing the van so thoroughly that every litre of breath and cooking steam has to condense somewhere. You want a low inlet and a high outlet and you want them before insulation, not after, because cutting holes through a finished ceiling is a horrible day.

About to cut the first hole in a 2016 Sprinter, what did you rip out and redo

Weight. I built in 18mm ply throughout because it felt solid, and the finished van was heavy enough that I was uncomfortable about the rear axle rating with water and two people aboard. Second build was mostly 12mm with 18mm only where things bolt through, and it is stiffer than you would think and about 90kg lighter. Find your plated weights before you design anything.

Is a webcam's built in mic ever good enough, or is that always the thing people hear?

Two mechanisms are stacking against you. Direct sound drops steeply with distance while the reflected sound in the room stays roughly constant, so at sixty centimetres in a bare room you are capturing a much larger proportion of wall than of person. Then the software noise suppression tries to clean it up, and that is where the underwater, swirly quality comes from - it is not the capsule being bad, it is the processing working hard. Get closer and the processing has almost nothing to do.
