Separate the two, because every video blends them. Acrylamide forms when you brown starchy food at high heat: that happens in an oven, a deep fryer and a frying pan too. It is not an air fryer phenomenon, it's a browning phenomenon, and the practical guidance is to stop at golden rather than taking potatoes to dark brown. The coating question is an entirely different argument with different evidence.
