Do 30-day challenges build a habit or just a streak you drop on day 31?

Going to disagree with the idea that they're a habit tool at all. A challenge optimises for attendance, not for progress: the metric is showing up, so the design pushes you to do something every day regardless of whether daily is useful.

I'd take a challenge as a sampler: 30 days of exposure to styles and teachers, at the end of which you know which two you actually like. That's genuinely valuable and it's not the thing on the tin. Judge yours by whether you came out knowing what you want to practise, not by whether the streak survived.

Shots are sharp on the back screen but soft at 100 percent on the computer

Also check your viewing habits. 100 percent on a 27 inch monitor is looking at a print about a metre wide from 40 centimetres away. Almost nothing is sharp at that magnification, and photographers torture themselves over softness nobody will ever see. Zoom to fit and ask whether it is sharp at the size it will actually be viewed.
